Bubble 'N Squeak Patties...Makes 6 patties
1/2 cup Savoy cabbage, very finely shredded
1 heaping cup cold mashed potatoes
1/2 cup sharp Cheddar cheese, grated
1 tsp. Dijon mustard
salt and pepper to taste
1 small egg, beaten
flour, for coating
sunflower oil, for frying
Steam the cabbage for 3 minutes until just tender. Leave to cool and squeeze with your hands to remove as much water as possible. Mix the cabbage with the mashed potatoes, cheese and mustard - Then season to taste. Stir in egg and mix until combined. Divide the mixture into sixths and form each portion into a flat patty using floured hands to form. Coat each patty in flour and shake to remove any excess. Lightly coat the bottom of heavy-based frying pan with oil. Cook three patties at a time for 3-4 minutes each side until golden. Drain on paper towels until serving.
Cabbage is a valuable source of antioxidant vitamins C, E and beta-carotene which have a protective effect on the brain. The cheese and egg both provide valuable brain-boosting protein. Add even more nutritional value by using whole-wheat flour.

Born in London in 1962, Nicola Graimes has been an editor, journalist and author for the past 20 years and has written numerous books based on health, nutrition, organic food and children's diets. She was editor of The Vegetarian, Vegetarian Living and Good Food Retailing. Her book, Great Healthy Food for Vegetarian Kids was awarded Best Vegetarian Cookbook 2002 in the UK.
